Dunstane House was built in 1852 to the design of the famous architect William Playfair, who also designed the nearby Donaldsons' College for the Deaf. Originally Dunstane Villa, as it was first named, was the private residence of the Ross family, famous for their Edinburgh Castle Rock and other confectionery produced in Scotland. The bandstand in Princes Street gardens takes its name from the family.
Our Edinburgh Hotel retains its Victorian architectural grandeur which, combined with an intimate country house atmosphere, ensures our guests leave with lasting memories of Dunstane. Crow step gables, archers' windows and ornate open fireplaces give Dunstane the atmosphere of a small castle.

The Skerries Restaurant in Edinburgh offers diners a superb selection of dishes, mostly harvested from the rich tidal waters around Orkney and Shetland. Our award winning chef uses the freshest ingredients to create an innovative menu, with food that simply bursts with style and flavour.
This elegant Edinburgh restaurant makes much of its handsome original features combined with an evocative and genuine Orcadian atmosphere.
The Skerries Restaurant and Stane Whisky Bar are open to guests and non-residents. Although the emphasis is on seafood (check our sample menu) we serve a rich variety of other dishes, including prime Orkney beef and lamb and vegetarian meals.

Starter, Steamed Shetland mussels served Thai Style. Smoked Orkney Salmon served with brown bread and lemon wedges. Timbale of Haggis & Blackpudding served with a Whisky Cream sauce.
Main Course, Char-grilled prime Orkney Fillet steak. West Lothian Rack of Lamb served with a Tarragon Cream Sauce. Breast of Chicken Stuffed with Scottish Brie then smothered with a smoked Bacon and Honey Cream Sauce. Orkney King Scallops served with a blackpudding mash and drizzled with an orange and tarragon cream sauce. Baked Orkney Longboat cooked with fresh herbs and cooked in their own juices.
